When our children left home in 1987, they ask me to write a cookbook for them because they loved the recipe’s I had done over the years.

When Al & I got married, I knew how to cook basic meat & potato meals. I was raised on a farm where we ate what we grew or raised and butchered. My Grandmother taught me how to make cornbread and my Mom taught me how to make biscuits. I learned how to cook some things in Home Economics. Still, they were just basic things. My husband loved Italian food and other ethnic dishes. I had never even heard of the spices. We used salt, pepper & Sage.

I could not afford a cookbook when we first married. With God’s help I made my own recipes.

Since I just threw stuff in the pot or bowl, I had no idea what the measurements were in my recipes. Starting in 1987, I had to make each recipe’. I would throw an ingredient in a bowl and then measure it before I put it in each recipe. Since I like cookbook with pictures, I took pictures of each dish.

In 1999 I tried to find a book that told what vitamins were in each food item. I could not find one. I got a little information here and there. I decided to add the information to the recipes I was still working on. I did not put the daily allowance per item with the recipes. I do not know how to do that. I just list the vitamins in each item on the recipe page.

It took me from 1987 to 2005 to finish this cookbook. Since I love to cook, it was a labor of love.

I have always cooked Breakfast and Dinner for my family. Lunch is a do it yourself sandwich or salad affair.

My family could not take vitamins. My doctor said our vitamin levels were so high that if we took a vitamin it would be toxic. According to him I prepared well-balanced meals.

I sincerely hope you enjoy these recipes as much as our family has.
