Grits Concoction

1 packet of instant grits (original, red eye w/ham, bacon, butter flavored, or cheese)
¼ Cup boiling water
1 tsp. Butter
1 slice Bacon or 1 Tbsp. Bacon bits
2 Soft Boiled Eggs
Mix all ingredients thoroughly in a cereal bowl. Add 2 soft boiled eggs (see previous page) and stir all ingredients together. Serves 1Serve with

This is what I prepare to eat if my stomach is the least bit off. It sits well and is so high in protein that it does not make my blood sugar go up. It also prevents a hypoglycemia attack when I can eat nothing else and it tastes good. I got this one from my Mom. My step-father had an ulcer and when it was acting up, this concoction was soothing to his tummy.
