4 Med. Red potatoes
1 Sm. Onion
Salt
Black Pepper
1 Stick Butter (or Margarine instead of Butter & Olive Oil)
1 Tbsp Olive Oil
Cut potatoes in half lengthwise and slice thin. Chop onion. Melt margarine in 12" skillet. Put potatoes in margarine, salt, pepper and cook until lightly brown on one side. Turn potatoes over and add onions. When onions are sautéed, Home Fries are done. Serves 4

Eggs (fried, poached, omelet or scrambled)
Bacon, Ham or Sausage
Biscuits, Toast, Waffles or Pancakes
Milk, Orange Juice and/or Coffee
