Sausage Gravy

4 Tblsp. Drippings for frying pan sausage
1 sifter Whole Wheat Unbleached Flour (or white all purpose flour)
1 Tblsp. Olive oil
2 cups Milk (0-4 percent)
Salt
Pepper
After you fry the sausage, add Olive oil. With a spoon stir and scrape drippings loose in pan. Sift flour into oil until it is thick but not solid. Brown flour and add salt and pepper to your taste. Slowly add milk as you stir briskly. Add more or less milk according to how runny you like your gravy.
