Fran’s Chili

1lb.                      Red dried beans

1 tbsp.                 Salt                                                            ½ tsp.                 Black pepper

1 tblsp.               Chili powder                                               3 Medium          Onions (chopped)

2 tblsp.               Light olive oil                                            2 24-oz. cans     Diced tomatoes

2 lb.                    Ground Round or Stew Meat                    1 tbsp.                Salt

1 tbsp.               Granulated Garlic                                       1 tsp.                 Black pepper

1 tblsp.              Red pepper seeds (or to taste)                   ¼ cup                Chili powder

Cook red beans, 1 tblsp. Chili powder, ½ tsp. Black pepper and 1 tbsp. Salt in slow cooker on low over night. Drain and rinse beans. Put beans back in slow cooker. Add 2 cans diced tomatoes, ¼ cup Chili powder, 1 tblsp. Salt, 1 tsp. Black pepper, 1-tsp. Red pepper seeds and 1 tsp. granulated garlic. Sauté chopped onions in 2 tablespoon of Olive oil. Put in slow cooker. Cut each piece of stew meat in half. Lightly salt, pepper and garlic stew meat. Brown in 1 tablespoon of Olive oil. Put in slow cooker. Stir all ingredients thoroughly and cook on medium for about 10 hours. If you want it hotter, add more red pepper seeds and chili. If you want it milder, add less red pepper seeds and chili. It it’s too hot, add a little milk or butter to cool it down. Makes 6-8 servings
