Low Cholesterol Fried Fish

1 Lbs. Filet of fish (Catfish, Crappy, Sole, Perch, Trout, or Cod)
1/2 cup All purpose flour
1 cup Yellow corn meal
Salt
Pepper
1 tsp Cayenne Pepper, finely chopped
2 cup Olive oil
Salt & pepper fish. Mix Cayenne pepper, flour and corn meal together. Heat olive oil in skillet on medium high (6) till hot. Coat fish with flour/cornmeal mixture. Put in olive oil and fry till brown about 3 minutes on each side. Put on paper towel to drain. Serves 3 to 4

If you want to add a little zing to the fish, add 1 tsp. of crushed Cayenne red peppers to the flour, cornmeal mixture. Use gloves to mix it into the meal mixture because the peppers will make your hands hot and irritate your eyes should you rub them later.
